Well who doesn’t like fries?? I always get cravings for fries on nice hot summer days especially when at the beach. As a kid I always used to get a portion of fries with loads of ketchup every time I went to the beach with my family and this tradition has stuck with me. Fries always seem to taste nicer if eaten by the beach. Well to be honest everything tastes nicer eaten at the beach. Sounds silly but it’s true. Fries are still allowed on the low FODMAP diet but if like me you’re trying to watch your waistline you might want to avoid indulging into a plate of fries. Here is where carrot and parsnip fries come to the rescue! These are a perfect healthy version and they’re so tasty! My favourite ones are the carrot fries as you get that sweet and salty taste. These are perfect as a side or as a snack.
- Approx 100g carrots cut into sticks
- Approx 100g parsnip cut into sticks
- 1/2 tsp garlic infused olive oil
- 1/2 tsp wheat free/ gf flour
- rosemary sprig
- Coat carrots and parsnips with flour, pepper and then add the oil and rosemary.
- Mix everything together well.
- Place carrots in a baking tray and bake in a preheated oven at 200C for 20mins.
- At this point turn the carrots and place the parsnip on the baking tray.
- Cook for a further 12-15 minutes. Turn the parsnips.
- Cook for another 15 minutes.
- Optional: Sprinkle with some salt.
- Serve with your favourite condiment or enjoy as is. I had my carrot fries plain and the parsnip fries with some ketchup.
PS: Always read food labels for high FODMAP ingredients. Ketchup often contains glucose-fructose syrup, onions and garlic. Find one without these high FODMAP ingredients.
